I should have planted tomatoes and basil this year so I could have one of my favorite sandwiches anytime I want. But I didn’t…so I had to head to the grocery store the other day to satisfy my craving.
I’m not a BLT fan, but a BBT (Bacon, Basil, Tomato) one instead. It’s a great combo of fresh herbs, juicy tomato and salty bacon – I add cheese, too. Yum! And I broke out my panini maker to make the sandwich extra special. Here’s my recipe for BBT sandwiches for two.
BBT
- 1 medium red tomato, sliced
- 2 Tbl. fresh basil, chopped
- 1 slice of cheese of your choice (I used Havarti this time)
- 3 slices bacon
- 4 slices bread (I used sourdough)
- mayonnaise, amount you like
- salt and pepper, to taste
Cook the bacon (I baked mine in a 350 degree oven for 15 minutes). While the bacon cooks, get all other ingredients ready and preheat a panini maker to medium high.
Brush the top of each slice of bread with olive oil. Spread mayonnaise on one slice of bread. Top with cheese, tomato, basil and bacon. Place sandwich on panini maker and cook for 5-8 minutes, or until bread is golden brown.
Note: If you don’t have a panini maker, place the sandwich in a small frying pan on the stovetop and toast each side for a couple of minutes.
