Make sure to get that cheese nice and melty! There's no doubting I love my food groups, but sometimes I just want something quick, easy, and probably awful for my caloric-intake. I won't lie to you. This pizza sammy has tons of calories, but it was hard to care after a big bite of all that gooey cheese and pepperoni.
How have I never had a pizza sandwich before? Anyone who knows me will tell you I'm a pizza fiend - I could eat it all day, every day in different ways and still not get tired of it. So when I saw this recipe on Pinterest, there was no other option for me: I had to have a pizza sandwich for dinner that very night.
Four ingredients! That's it! (Well, unless you want to add your own extras, but for the sake of my Lazy Baker soul and the fact it's all I had in my fridge, let's stick to 4.)
Ingredients:
- 3 slices of bread (your choice, though thick slices like Texas Toast probably work best)
- Pepperonis, halved (to prevent any from slipping out and scorching your chin)
- Marinara sauce (homemade or jarred, your call - but keep in mind I'm called the Lazy Baker, so I'm a big supporter of the jarred stuff to keep it easy)
- Cheese (I chose provolone and mozzarella, but the possibilities are endless!)
You can probably figure it out from here. Bread --> Provolone --> Pepperoni --> Mozzarella --> Bread --> repeat.
Now the marinara sauce is key. I put some on each slice of bread and once it absorbed, I put a touch more on for flavor. Then I stuck it on my panini press for a few minutes (which you can also do on your griddle, stove top with pan, etc.) Retrieve, cut in half, and bam! Pizza sammy.
When JLo questioned the slice of bread in the middle, I explained that it helps hold it together a little better. The sandwich is gooey, but doesn't fall apart. The marinara added so much flavor and kept it from drying out while on the press. Seriously, I'm baffled as to how I've just now discovered this pizza sandwich!
The best part is that anyone can do this, with just about any ingredient they want with pizza. You want green peppers, mushrooms, spinach? Just toss it in - there are so many options! This might be my new favorite sandwich. In fact, I think I know what I'll make at home for lunch today!
