Food processing industry is the largest manufacturing sector in the UAE in terms of turnover, value added and employment. In late September, the Perfect Food Factory, a company owned by Saudi Arabia’s Supreme Foods Processing Company (SFPC), announced the commissioning of a new food processing line, its third at Dubai Industrial City. Operating out of a $27m facility, the new production line will turn out 100 tons of special cuts of raw and cooked poultry each week, adding to the firm’s existing capacity of 250 tones’ of beef and poultry products.

Thermal, mechanical and physical processing methods are widely used for the food processing. This primarily involves in-container sterilization of foodstuff helps in prevent, eliminate infestation of food with microbes hence, development of food processed products.

Modern food processes for food manufacturing based on membrane technology mainly applied to obtain functional foods and etc. Heat sterilization is another method in which food is heated at a sufficiently high temperature so as to destroy microbial activity.

Food rheology, Food Fortification, Food rendering are some of the modern trends in Food processing industry. Food rheology is the study of the rheological properties of food. Food fortification is the process of adding micronutrients to food. Sector growth opportunities include food processing equipment, packaging, raw material and the financial instruments required to support growth in the food segment.

There are different enzymes causes spoilage changes for example - softening of fruits, browning of cut fruit. Enzymes are either destroyed by heating or prevented from acting by changing the acidity of the food. When food processing is done correctly, the number of spoilage microorganisms is reduced. Spoilage occurs if there is a failure in processing conditions or packaging materials that can have an effect on the food

Fermentation in food processing industry is the conversion of carbohydrates to alcohols and carbon dioxide using yeasts, bacteria, under anaerobic conditions. Fermentation gives nutritional benefits to food hence plays important roles in food processing industry

Food safety issues can easily become non-tariff trade barriers and are increasingly used as marketing tools. Hazard Analysis Critical Control Point (HACCP) system is the internationally recognized system to help assure safe food production.

Food Quality control is the evaluation of a final product prior to its marketing, i.e. it is based on quality checks. Since, at the end of the chain, there is no way to correct production failures or upgrade the quality of the final product.
