Apple Puffs

Directions:
Peel and dice apples into 1/8-inch pieces. Add apples to boiling water. Boil till the apples are blanched. Remove apples, put into container and add spiced rum and cinnamon. Refrigerate for 24 hours. Then cut two sheets of pastry dough into 6” circles. Form into muffin pan. Add apples. Cut the rest of the pastry into circles and cap ingredients. Cook at 350 degrees for 15 minutes. Let cool and add rum sauce. Serve with vanilla ice cream.

Rum Sauce for Apple Puffs

Directions:
In order, add whipping cream, egg yolks and vanilla in mixing bowl. Whip until contents starts to thicken. Then add rum and sugar; hand mix for five minutes and refrigerate.

Red Velvet Cake
Bake: 35 - 40 minutes

Cream sugar and oil, add eggs and beat well. Add vinegar, food coloring and vanilla, beat well. Sift dry ingredients, add alternately with buttermilk and beat well. Pour into greased and flowered tube pan. Bake 350 degrees Fahrenheit for 35-40 min.

Ingredients:
8 oz. cream cheese

16 oz. powdered sugar

1 stick margarine

Cream all the ingredients together well.

Blonde Brownies
Bake: 40-45 minutes

Ingredients:

Preheat oven to 350 degrees Fahrenheit. Grease or spray a 9x13” pan. Combine softened butter and light brown sugar in a large mixing bowl and cream with an electric mixer. Add eggs one at a time, making sure to incorporate each egg well before adding another. Add vanilla and mix well. Add baking powder and all purpose flour to the sugar mixture about one cup at a time. Make sure that everything is thoroughly mixed. Add chocolate chips last. Place the mixture in prepared pan and spread the mixture evenly. Bake for 40-45 minutes, or until the top of the blonde brownie has taken on a nice golden color. Cool completely. Place in refrigerator to firm up a bit to make it easier to cut and to remove from the pan. If cut at room temperature, it may be hard to remove without breaking. Serve warm with vanilla ice cream.
